Growing up, I remember that there were certain veggies that I resolutely refused to eat, even if threatened with having to go to bed hungry. There were a few other items that I didn’t like, either. Chief among those other items was liver. Still, today, I’m not going near it!
However, in an effort to “expand my horizons”, I tried some Brussels Sprouts while I was in NY. Mind you, they were tiny bits in a salad and they had been fried. 🙂 Well, it was a small step forward! Surprisingly, I didn’t die, pass out, or even have a tummy ache after eating them. Hooray! Next, I was at Hickory Tavern and the waitress suggested that I try the friend Brussels Sprouts with balsamic glaze and bacon. Ha! She said the magic word, bacon! I was a bit skeptical, at first, after all, these were full sized and not mixed with anything else. Quite the step up! Again, I survived. Not only did I survive, but … they tasted good! WTH???
On my next trip to Walmart, I bought a bag of them (Yes! You read that correctly!!!) and sautéed some of them, cut in half, with some other veggies and they were quite good. Now, you see, I’ve come from being totally against, to actually buying them. What a step! Throughout the week, I actually made it through the whole bag! Sweet!
While I’m putting that out there, I’ll say that I also baked and ate an acorn squash … squashes were rather taboo for me, too. I’m still not up to boiled spinach, and doubt that I ever will be. Boiled okra, too, if not on the list. I can’t deal with slimy texture. Gaggggg! 😀
